They are using the filters built into the AKM DAC

Mode 1 and Mode 3 are both sharp roll-off, but they are not brick wall. They only differ in delay, so they should be indistinguishable.

Mode 2 and Mode 4 are both slow roll-off. Again, they only differ in delay, so they should be indistinguishable.

The difference in response between Mode 1/3 "sharp" and Mode 2/4 "slow" is relatively modest, so some people will hear a small difference and some people won't.

Mode 5 is called "super slow", and that's an understatement. It's nearly a straight pass-through. That will give you tons of aliasing and should sound different.

Mode 6 is "low dispersion". I'm not sure what the purpose of it is, AKM's documentation doesn't really say. But the frequency domain response is in between the "slow" and "super-slow" options.
