I am no engineer but I think I understand your last paragraph above about the decoding process built into? or required by the Burr-Brown DAC chip.
As someone who has been digitizing LP's and 78s for 15+ years, I am curious why you say one should use "a $200.00 phono stage with the same op amps."
Tascam DA-3000 recordings are accurate enough to easily hear the difference of different analog equipment - including different phono stages, turntables and cartridges.
Even if the Tascam DA-3000 does use what I think you are saying are cheap op-amps in the analog to digital decoding, they are of sufficient quality to make obvious differences in the analog front end used for recording.
Nevertheless it is interesting to think about how a specific dac chip works and what its requirements are.
