Some notable exceptions-Gordon Lightfoot's Songbook has unreleased tracks that are of uniformly high quality (Gordon is a notoriously tough critic when it comes to his songs and he grudgingly admits in the liner notes that the unissued songs were pretty good).
The Steely Dan Citizen box is a good and cheap way to get all the studio albums up through Aja, and it has the really cool unedited version of F.M., which has the extended sax solo.
The Los Lobos box set has lots of cool side project stuff like the Latin Playboys, songs from soundtracks, etc.
The Tom Petty Playback set is another good one.
