The Romantic Generation (post Beethoven through Chopin)
Harmony, by Walter Piston - complete, in-depth, and readable
Paul Hindemith's texts - cover theory and practice of music composition
The Berklee College of Music books - I can't find any on my shelves right now, but they have a series of very readable texts on theory and composition.
