Mahler 1st and various Sibelius with Minn Orch and Osmo Vanska were riveting - every moment. Especially the Mahler 1st some years back at Fisher - most of the audience stood around in the plaza afterward, saying very little, just needing some time to recover.
Also some of the Levine Wagner perfs over the years were magical, and kept pretty much everyone enthralled. His Wagner was always good, but on a few nights when the stars aligned most everyone left feeling that five-plus hours just wasn't enough. Life is short, opera is long.
When it's just OK, I let my mind wander. When it's not working for me, I'll bug out at half-time to find a martini and a good dinner, and live to fight another night.
