The EMI recordings are generally a lot slower, the ones on DG much more "mainstream". Celibidache fans, in general, seem to prefer the EMI ones.
Jochum is probably the most common recommendation for a "starter" set, either EMI or DG. I like Karajan's way with the music, but the sound that DG provided isn't very good.
If you can stand primitive sound, I think that Furtwangler's Bruckner is in a class by itself.
BTW, all of Celibidache's EMI recordings are due for reissue (at ridiculously cheap prices) in October.
