No reason to avoid sets when both sets of 1-9 by Jochum are very cheap. I'd give the DG set the edge for more natural sound, but I wouldn't want to be without the Dresden set. Not everyone responds to his tempo fluctuations, though.
You don't say which Karajan recordings you have. He recorded 4 & 7 multiple times. I think the EMI 7 is essential. I like the EMI 4 as well. The DG 5 is probably my current favorite of that symphony. Simply awesome.
You're not going to get any agreement on an essential list. I don't think my own lists would agree month to month. Some individual recordings that come to mind:
2: Stein/VPO
3: Schuricht/VPO
4: Klemperer/Philharmonia/EMI (fast!)
5: Rögner/Berlin (fast!), Kempe (I haven't heard the new XRCD, but avoid any other CD issues)
6: Muti/Berlin; Stein/VPO; Celibadache/EMI
7: Böhm live on an Andante set; Rosbaud
8 & 9: Schuricht/VPO (available from Japan)
