I'll give it a try - and, for the most part, I won't worry at this point about whether the specific edition used is optimal - for instance, the Giulini recording of No. 2 has been criticized for its use of the Nowak edition of the 1877 version. I'm just not going to worry about editions and versions as far as this list is concerned.

7: Blomstedt/LGO (Querstand), Matacic/CzPO (JVC/Supraphon - K2 Processing!)
8: Svetlanov/USSR SO (Melodiya) [OK, OK - I'll admit this is a personal preference and the tonal quality of the orchestra is all wrong, but still, this is a mighty conception which I prefer to the more acclaimed Mravinsky/Leningrad mono performance), Blomstedt/LGO (Querstand), van Beinum / Concertgebouw (Philips - mono)
9: Skrowaczewski/Minnesota (Reference), Giulini/CSO (EMI), Giulini/VPO (DG), Blomstedt/LGO (Decca/London)
I guess it's clear I like the Leipzig Gewandhaus Orchestra. :-)
Even though you don't want to get a full set, I would also still recommend the Skrowaczewski / Saarbrücken RSO. The conductor's magnificent conceptions shine through clearly, even though this is not a top tier orchestra. It used to be very inexpensive, but I'm not sure what its status is now.
I also should note that I love the Celibidache performances (Symphonies 3-9), despite the often ultra-slow tempos (particularly on EMI).
Finally, just FYI, the Jansons/Concertgebouw performances of symphonies 3 and 4 are now available in Europe (RCOA Live). I haven't heard them, but if they're anywhere near as good as the previous Jansons/Concertgebouw performances on this label, they could be VERY good indeed.
