I have a few minimally-miked recordings in which two microphones are placed some distance away from the orchestra, and what gets captured is the natural sound of the orchestra and a lot of room reverberation. The sound isn't bright in the "hi-fi" sense. But most recordings aren't made that way. Most recordings are made with multiple microphones, usually placed too close to the instruments, and then electronically mixed (often with equalization and electronic reverb added). This creates the "hi-fi" sound people expect. But it isn't real. The mixing process also creates the opportunity to screw up the tonal balance, and most recordings err on the side of brightness.
