Olive oil and flour, cooked low and slow until it turns a lovely shade of nut brown. Imparts loads of flavor. Some cook it until brick red in color, but I don't have that kind of patience.
Andouille is a smoked pork sausage. Usually with a fair amount of garlic in the grind. Awesome stuff.
