Pigs (and many, many other organisms) make it -- we don't.
Causes all manner of problems -- the bite of the Texas Lone Star Tick's has interesting effects on some folks, too.
All humans (AFAIK) make anti-"alpha-Gal" antibodies -- because of dietary and/or environmental exposure to the antigen.
Being a glycobiologist, I could go on, and on, and on... on this topic.
