RE: Best year ever

In the case of an onion, curing simply means a drying period once they're out of the ground before going into long term storage. The outer layers dry and tighten around the bulb and make them more suitable for storage. Plus the curing allows the necks of them seal off, thus helping avoid early rot. They'll lose a fair amount of water weight from curing. Less water content also helps reduce early rot.

I usually let them cure for two weeks in the shade on the deck, but this year, since my lovely bride is away at her Fortress of Solitude in Illinois, I have them spread out on cardboard on the garage floor. After curing and trimming and a good wipe down, I put them in the produce drawers in the garage/beer fridge. The last of ones I put in there June 2020 got used up in a batch of gumbo I made in January.
