I lived in Korea for 2 years - my favorite dish

And I definitely missed the food. Kimchi is not for everyone but I try to tell people that the table kimnchi that is served at meals that westerners have tried is something like 1 in 1000 varieties. Some are not strong at all and so I suggest looking in the grocery store and you can see different types of Kimchi. I think if it like Pickles - there are sweet pickles and sour pickles and something in between.

My favorite Korean soup is mul naengmyeon (pictured) which is an ice-cold soup (crushed ice) with buckwheat noodles.

How to make it: When the Korean restaurant opened on my island I asked the Korean owners to add it to the many - they did amazingly - and it sells well. Well it sells well to me anyway :-)

You can buy the packs in the west - pretty easy to make.
