That doesn't sound good, massive ducks and massive chickens. The chickens these days are 5-6 pounds, bordering on small turkeys, terrible flavor and texture, I can't eat them, I like the 2.5 - 3 pounders. See if you can get another brand of duck, I have some Maple Leafe brand breasts where I work, they have a 1/2 inch of fat at the most and cook up real nice.
