The method of serving draft beer at your favorite tap room makes a big difference in flavor. First, there's age of the product in the keg. The lines used between keg and tap for serving play a role as well. If they're not cleaned on a frequent basis, flavor is definitely affected. The cleanliness of the glassware matters. We might as well include proper pressure of the gas used to push the beer, whether its CO2 or nitrogen, is another factor. Serving good beer on tap demands some attention to details.
Cask conditioned beer through a proper beer engine is an entirely different subject.
