RE: Pizza yeast.

I think that King Arthur Flour has a weight chart available on their website. The weights of their different flours vary between 96 and 120 gms for a true measure cup. After reading "Bread" by KAF's dough guru Jeffrey Hammelman, I took to the practice of weighing ingredients and using baker's math to figure out hydration levels for the "freestyle" recipes I've developed. There are other tables of ingredient weights available on the internet but I admit to not having referred to any of them for use in a long time.
