RE: Pizza yeast.

I buy my yeast in the bulk packages. Red Star active dry yeast is about $4.59 for a 2 lb package at Costco. Unless there has been a spike in demand and prices, the SAF instant dry yeast is around the same for a 1 lb package at Walmart. There is little difference between the two other than hydrating the ADY. You can hydrate the IDY if you want to and quite a few professionals do.

The thing to do with both ADY and IDY is to buy the large packages and then store the contents in an air tight container in your freezer. Store what you might use in a month or so in a small airtight container in the fridge for convenience and refill as needed. I bought a 2 lb package of the Red Star ADY when I retired eleven years ago, put it in a container in the freezer of my beer fridge and it's still working. I bought some IDY a few years ago because I expected the ADY to fail or slowly lose its efficacy. I can use either according to my whim of the day.

A lot of amateurs say that the ADY is preferred by pizza shops because it adds extensibility to the dough. I've been making my pizza crusts from scratch on Saturdays for several years, about 515 grams give or take a few, and haven't seen any substantial difference between the two yeasts other than the price.
