My lovely lady found this recipe and it's a huge winner. Not only is it delicious, but it's always completely predictable for cooking time, so we no more have to bother with meat thermometers and whole chickens that take anywhere from 1 1/2 hours to well over 2 1/2 and a late dinner.This does take a little prep work to cut out the backbone and flip the chicken to make it flat, that's the trick!
On the plate is chicken, green beans, oven roasted sweet potato and secret salad.
