I don't count cook time as effort unless I'm constantly tending to it.
If you look at it in terms of effort per pound of food, smoking and roasting big pieces of meat are near the bottom end of the scale, which is why I like them for entertaining.
On the other hand, my wife and kids are flaky when it comes to leftovers, so I hesitate when they ask for something like pulled port when we're not having people over. Sometimes I'll find myself stuck eating the same thing all week and still throw some out because they're not helping.
Some things I like to cook take a lot more effort just for a single meal. Cioppino is #1 on that list. It's worth it, but I don't make it more than once a year for a special occasion. Beef daube provençal is another. From scratch pizza takes a lot of effort too, and I'm never really satisfied.
