I don't have cable, but I've seen a few episodes

I'm usually not in a rush. My normal routine for baby backs is 3-1-1 at 225F. 3 hours smoking, then 1 hour wrapped in foil, then back on the grate for 1 hour with a mop sauce (I use a thinned out BBQ sauce). They are super tender and almost falling off the bone, but not quite. That's how my wife and kids like them.

I've tried adding different things when foil wrapping: apple juice, butter, mop sauce. Butter gives them a richer flavor (too rich IMO) but everything else tastes about the same.

I've tried 3-2-1 as posted all over the internet, but in my experience, that's way too long to spend in foil, resulting in a lot of shrinkage and loss of texture.

But when I'm not trying to please my wife and kids, I prefer just a rub, no foiling, and no sauce. They take about 6 hours at low temp without the foiling step, but they have more smoke flavor and more chew.

When camping with my portable grill, I cook them a little hotter to get them done sooner. It's more like 2-2.5 hours smoke, then 30-45 minutes in foil, and a final half hour just to caramelize the bark. About 3.5 hours total.
