I bought a gravel bike two years ago, and opted for Shimano 2x11 gearing with a compact double.
I tried SRAM 1x, which was getting very popular/trendy on gravel bikes. But I didn't like it because of the big jumps in ratios, especially at the low end. It made it hard to keep my best candence on climbs. Also, the shifting was slower and clunkier, and I felt some chain bind when shifting while really pushing hard on the pedals. That hurts you the most on steeper climbs where any loss of momentum is a setback.
My area is full of rolling hills, with a short steep pitch here or there, but nothing like some of the long steeps you can find in Pittsburgh. So a compact double is the sweet spot for me. I'm a bit anal about derailleur adjustment and I can't remember ever dropping the chain on one of my bikes with a double. But it has happened to me a few times with a triple.
Adjusting a triple is usually a bit of a compromise, whereas a double is easy to get "just right." So I'd only have one if I was touring with a load or lived somewhere with a lot of steeps.
