The conventional wisdom I've always heard is that the more you ride, and the more aggressive your position, the more you'll like a minimally padded saddle. And vice versa: the less you ride, and the more upright, the more you'll like a lot of padding.
But even back when I was doing some racing and logging a lot of miles, I always appreciated some padding. I am still using an original Specialized Body Geometry saddle from 1999 (I think). It looks like this:
I've tried newer, lighter versions but after a half-hour I'm already sore.
