There was a bit of an IBU arms race going on for a while too, but thankfully that has subsided a little bit.
I do like some high IBU IPAs, but only if the bitterness is balanced out by a strong malt and high alcohol content. That's a ton of calories though. New England style hazy IPAs are OK too. Some of the worst beers I've tried are session IPAs, with a full dose of hops but everything else watered down.
Another thing that contributes to bitterness is carbonation. That's why I enjoyed hoppy cask ales when I used to spend a lot of time in the UK. So when I buy something I haven't tried before and it's too bitter, I'll usually just pour and then let it sit in the fridge for a half hour.
