A "wet market" is a marketplace that sells perishable foods. As opposed to a "dry goods" store. We have wet markets too. We call them supermarkets, grocery stores, butcher shops, and farmers markets. They are all wet markets. Asking the Chinese to close their wet markets literally means asking them to stop all sales of meat and produce.
The problem comes from selling wild animals, some of which are kept alive at the markets and slaughtered on the spot. It's unfortunately a common practice in a lot of the world, and the Chinese have now banned it.
