I haven't thought about mountain cedar pollen/cedar fever for years, so I haven't ruled it in or out, but since you reminded me of it's existence and that this years cedar pollen was worse than normal, I researched it's symptoms.
From what I found online, cedar fever shares some of the symptoms (runny or congested nose, mild headache, dry throat and sneezing) that I had, and that despite the name "cedar fever", no fever is experienced with cedar allergies. But, I also read that an immune response/allergic reaction to cedar pollen can cause inflammation that may raise your temperature slightly. Cedar fever also frequently presents with itchy and watery eyes and generally feeling "itchy" which I did not experience. But, I understand that symptoms are not always cut and dry.
I never had a long history of allergies, but about 10 years ago I was diagnosed with chronic sinusitis/allergic rhinitis after I developed hearing impairment in one ear. I was treated with an antihistamine, leukotriene inhibitor and a nasal steroid. After improvement in my condition, I was able to wean myself off of the meds. In 2014 I developed eustachian tube dysfunction (self-diagnosed) which I successfully treat with an OTC nasal steroid whenever it pops up. Otherwise, my allergies are quite mild and only occasionally bothersome.
There is also the possibility that I simply had a mild case of influenza. As I received the high-dose/senior flu vaccine back in November, it may have conferred me with some protection if was the flu, resulting in an attenuated case. I forgot to mention that I experienced a decreased appetite starting on day one of my illness prodrome, which continued for a a significant length of time after the flu-like symptoms disappeared.
Like I said, I've never experienced anything like this before, whether it be the flu or allergy related illness.
So, it could have been cedar fever, the flu or Covid-19. At this point, only an antibody test will get me nearer to the answer.
