Is onions, celery, and green peppers. There are no carrots usually involved. Of course you can do whatever you like. The Holy Trinity thing came from Harry Connick on one of his shows. He is right.
The second ingredient in most gumbos, jambalaya etc. is a roux. This is basically olive oil in which flour is basically browned to a color of toasted almonds. It is the basis of many recipes and gives the food a full flavor.
What I love about Creole and Cajun food is the complexity of flavors. It isn't like most other cooking. First you taste one thing, then another, followed by something else. It's kind of like a party going on on tha palate. It may be overwhelming for folks who have eaten bland food their whole lives. To each his own.
