Why refrigerate just before cooking? Wouldn't that inhibit the inside cooking or is that the point? Please don't take this wrong I'm not calling you out just curious. My wife and I love crab cakes and use our local fresh dungeness crabs. Look forward to testing this recipe may add a little finely chopped shallots.
