Looks tasty. I like the bacon grease suggestion.
"Bounce back a little when you press the top with your finger". That might work, but a good instant read meat thermometer should be in every kitchen. I recommend the Maverick, not so much for steak, although it will help you to nail medium rare, but especially for chicken and ground beef.
