RE: make your own

A pizzeria near West Point gave me a tip about making a red sauce. They used equal amounts of canned crushed tomatoes and tomato puree for their pasta sauces. They wouldn't give me a rundown on the spices they added but I found that basil, oregano, bay leaf, crushed garlic, a little celery seed, and a judicious use of crushed red pepper makes for a tasty red sauce with only a short time simmering.

Pizza sauce, OTOH, is just crushed tomatoes, garlic, sugar,salt, crushed red peppers, and a bit of olive oil. The sauce isn't meant to cooked in any way.

It takes time to find the best brands of canned tomatoes in your area if that's what you've got to deal with.
