RE: I'd take the Spanish version over the Chinese ...

My go-to knife is a Henckels Twin Signature 7" Santoku. It's second or third tier, but still made in Germany. I love the handle shape and it only needs sharpening once a year. My sister-in-law found it on sale for $50 about 5 years ago and gave it to me as a present. It goes for $85 now.

I liked it enough that I went out and purchased Henckels Classic paring and boning knives. These were $35 and $50 IIRC and they are made in Spain. They don't sharpen as well or hold their edge as long. I'm kind of disappointed. I'm not sure if that has anything to do with where they're made, but if I buy another Henckels it will be further up the line and made in Germany.

So, any recommendations for a 4" parer under $50?
