there are only a couple thousand alloys of 'stainless steel'.
And a few interesting twists.
My pocket knife? Made from a powered alloy called S30V which is a bear to sharpen. This is nearly a grain-free alloy and I think 'hot press sintered'.....Made by Crucible.
I have some expensve but CHEAP and never to be bought again knives from CutCo.....I think they are 440A stainless which is minimal.
My old Buck Folding Hunter may be 440C.
I would personally avoid the 'big names' and instead seek out a Japnaese blade. Damascus is back and makes both a visually appealing blade, but one that WORKS.
