...I have all Wusthof, Henckel, and Sabatier knives (and other assorted accessories), but they are all decades old. All big names, and the ones that I have are all the professional-grade products. Unfortunately, all of those brands are selling consumer-grade junk, as well. The name is on it, but the quality is not. I see entire blocks/sets of Wusthof knives being advertised/sold for less than what I paid for a single 10" knife--30 years ago. I still have mine--love to know what that junk looks like in 5.
