Ube Pancakes

Growing up on Oahu in the 80s, we commonly could get pancakes made with macadamia nuts, bananas, or guava. Then pour coconut and/or pineapple sauce on top.



Due to Filipino influences, the 1990s saw the popularity of ube (purple yam) rise. Now, you don't have to be in Hawaii, SoCal, or the Bay Area, in order to get ube pancakes.



Honestly, pancakes are filling. So you should have some leftover ube pancakes to bring home. If you look under the purple sauce, note that the pancake itself is made with ube. You may garnish this with fruit. And your choice of beverage (doesn't have to be boba!) takes it to another level.
