Troubleshooting

"The usual go-to is the GFI breaker in my bathroom.
It would NOT RESET."

"If all the wires are secure, My FIRST INSTINCT is to swap to a new GFI."

You may very well be right. But...

You've repaired the light fixture once already. And, from your post, you apparently have had to reset the GFI more than once in the past.

What's not working?: The light.

Leave the light OFF. Turn on everything on that circuit, AND, connect something like a hair dryer directly to the bathroom GFI socket.
Does the breaker or GFI trip?

If not...

Remove the light fixture.
Attach some other device (table lamp, fan, clock radio, whatever is convenient), to the house wire. (Making sure the breaker is OFF, of course.) You can just use some electrical tape to secure the wires to the device's plug.
See if the breaker and GFI reset properly. If they do, the problem is the fixture.

If they don't...

Turn off/disconnect the temporary/test device.
Turn on everything else which is on that circuit.
Does the breaker trip?
If it does, the problem is the breaker. (Or, there's too much stuff on its circuit.)
If it doesn't, THEN, the problem is likely the GFI.

Note: Hopefully, this is coherent, but maybe with some redundancy or out-of-order instructions. It's the best I can do at 10:45 pm after three glasses of wine.
