Phono kit questions - Volume pot?

Seriously considering pulling the trigger on an order, but I'm a kit newbie and have a couple questions:

Is it possible to include a volume pot in order to bipass my current linestage preamp section (like the Art Audio Vinyl 1)?

Is it possible to order & build the Total SE Kit in MM / fixed load configuration and order/add the full implementation (MM/MC trannies, load selection) at a later time?
