If care was put into the recording to begin with. Some labels do it much much better than others. With an excellent recording and adequate system, one experiences a multichannel sensation.
I'm unsure if you have Jim Hall's "All Across The City" on Concord Records. It has to be one of the best recordings of music I've ever encountered in just two channel. One will get the sensation of multichannel with this. Try it to experience what I'm stating. Your room will be filled with music.
You'll correct in stating that the bulk of multichannel is being released for SACD for classical music. Zander's Mahler 6 on Telarc is another example of a taste of the multichannel sensation in just 2 channel!
