Not all equipment in the analogue days was good. Some people put up with scratched beat up records. Others went nuts with a single pop and were enlessly obsessive about their collections. Those latter ones probably went the route of Hi-Fidelity reproduction and on quests for the ultimate recordings.
Its the same nowadays. kids listening to CD's can and do recognise better sound and the same subset are the ones go go nuts over headphone amps/tubed amps etc while the majority accept what is there.
I think when faced with a decent recording most people would recognise it ("wow that sounds like a real guitar", or "really sounds like they are in the room") but most are not bothered by persuing it (cost, doesnt hold the prestige - Big screen TV's have more the "wow" factor nowadays comapred to the HI-Fi stack 20-30 years ago)
