"Why You Hear What You Hear"

This is an excellent indepth book about hearing.

"Why You Hear What You Hear" by Dr. Eric Heller. 500 pages of hearing science, including a good dose of psychoacoustics.

Another excellent read, and possibly more approachable for the layman, is Harry F. Olson's "Music, Physics and Engineering", published in 1967. While specific product material is dated, the fundamental sciences still apply.
