Firstly, this whole topic is as old as the hills.
That it's being discussed now, in audiophile-land, isn't surprising. Audiophile-land has recycled the same topics every couple of years for many decades. After all, there's a new crop of newbies to appeal to - every year - and that's one of their market demographics.

Let's review:
What do "audiophiles" mean by "purist". Someone please define that for me, or, please stop using the term.
"Minimalist" makes some sense. It means using a minimum number of microphones, and, consequently, channels and tracks, to achieve a final two-channel product. (Post-recording processing is a separate issue.)
"Minimalist" recordings are typically 2 to 5 microphones, depending upon the situation, regardless of the size of the ensemble. (With-choir works excepted.)
The choice of microphones, and their positioning, is a critical component.
