I do not speak from direct experience here, but'tube sound' is often attributed to high second harmonic levels relative to higher orders. Any truly balanced design (SS or tube) should have very low second harmonic due to symmetry. So if you want that 'sound' you're probably stuck with a single-ended pre-amp.
If you want to drive it from a truly balanced source consider adding an input transformer (I expect Jensen have a suitable one) that will take the balanced source signal and present it to the single-ended inputs. You can do the same at the output if you want to drive a balanced power-amp.
Alternatively, you may be able to use just one half from a balanced source to drive a single-ended pre-amp. I have this arrangement (for reasons of byzantine complexity) where I use the balanced outputs of a Wadia 830 into a single-ended input power amp. I modified the PA input connector to use the +ve and gnd signals from the XLR and ignore the -ve. It works fine and if anything is a little better than using the Wadia RCA single-ended outputs.Regards
