It's great that you have experience building guitar amps. Much of that knowledge will carry over into audio equipment repair and troubleshooting.
The "All-in One" idea is very attractive, but it also means a fairly cramped chassis with all three components on top of each other. Even going to an integrated amplifier with a separate tuner results in cleaner layouts and easier repairs.
I have several vintage tube receivers, a Sansui 500A, a Scott 340A, and a TRW/Bell that all need repairs. I bought these at thrift stores or estate sales for very little, but they need work. I do not have your experience, and they all have quite intimidating layouts.
I suppose you know about bringing up vintage tube stuff on a variac. The electrolytic power supply capacitors will need to be replaced. The coupling ones are usually OK. If your transformers are OK, almost anything else will be repairable.
Speaker choice depends on the listening room size and shape as well as the music you plan to listen to. Most modern speakers are designed for 4 ohm impedence, and most vintage electronics do better with 8 ohm (or 16 ohm) speakers. Several vintage enthusiasts here advise adding a high wattage but low ohm (1-4 ohm) resistor in series with one of the speaker leads.
Vintage audio can be an addiction, be careful. You have been warned.
