Music recordings do not necessarily have a centre channel. They are often (to recall an old word) quadraphonic ( front L,R, rear L,R) not 5.1 or 7.1.
There are recordings from the early days of stereo when a centre channel was employed in the music recording process. This was mixed with the left and right channels to produce a 2 channel stereo production master to make discs for sale. Some of these e.g. early Mercurys have been released as SACDs with the three channel version intact.
The origin of 5.1 channels relates to movies only and a desire to improve dialogue intelligibility by including a centre channel.
In fact and casting my memory back, the technically correct speaker layouts for music surround and that for home theatre are not strictly compatible but of course in practice most people who have such systems use them for both forms of entertainment.
