An obvious one is that in both cases you send SPDIF to the DAC
Optical:
- perfect galvanic isolation
- the standard says 24/96 max but often modern hardware performs better
Coax
- no galvanic isolation
- 24/192 or higher depending on the implementation.
Coax can be better in the jitter department but this of course depends on the implementation.
Only a listening test can tell you how they sound in your specific system
