They just want to use the best-sounding source material possible. Some choose vinyl, some choose high-res, some choose CD, and some show a mix.
I always used to alternate LP and digital simply because it is difficult to keep a steady flow of LP going. My preferred demo is to play one track at a time and not an entire album side, and give a little intro to each piece (most of it unfamiliar to most attendees). Easy to do with digital, hard to do with vinyl, easy to do by alternating the two. The only time I compared high-res to CD was the January '97 CES when 96/24 disc first became available and I had hardware capable of playing it. People were very interested in the difference in sound, and I was trying to establish a new format - something that later got wiped out by both SACD and DVD-Audio. Now 10 years later one can buy a few 96/24 downloads again. Progress, of sorts.
