I might be wrong but isn't that panel resonance thing quite similar to how an accelerometer works internally?
We get a read out because the movement changes the resistivity (impedance) of a piezo element as far as I know.
In the speaker the driver is coupled to the panel via the enclose air volume and movements in the panel change the driver's impedance.
