The problem with most of the cable useful for DIY speaker cable and interconnects, is that it is fairly stiff.If you need to extend the headphone cable, use a well regarded cable to do this, and place the appropriate connector on each end. Since we are talking stereo common ground in most instances, three separate conductors are needed. Here, some 89207 might be the best bet. Or two coaxes could be used side by side.
As for replacing the headphone cord itself, I do not recomend attempting this using the commonly avalable DIY cable materials.
The closest thing I can think of that would be worth trying, is a pair of CAT5 twisted pairs, wrapped with teflon tape to keep it from untwisting.
