The cable's dielectric material (PVC, Teflon, etc.) will have an effect on how quickly a cable burns-in. Also, whether the cable's manufacturer has treated the cable with a cable cooker (VIDAR, Audiodharma Cable Cooker, Fry Baby, etc.) will determine how good it sounds out of the box and how much additional burn-in time may still be required.
These are just two factors that come to mind.
