I think increasing the capacitance always improves the sound, especially as it makes for darker backgrounds, better bass, and better dynamics.
You are are right to be careful with how much. What usually happens is the on/off switch arcs and then it has to be replaced. On one of my amps I just leave it "ON" and plug in the cord from the back. No problems in more than 5 years, but I do have a handful of rocker switches!
