I have built several and changing components (like type of resistor or capacitor) does change the sound of the amp as do operating points and layout. Manipulating those variables is what "voicing" an amp is all about.
You may be too young to remember the distortion and power wars back in the 70s. Every time you turned around somebody introduced an amp with more power and less distortion. That was all some hifi magazines reported on, and they all sounded like crap.
Lesson learned... Not everything can be measured, you have to listen.
