The 5751 has a lower gain than the 12ax7, I think the 5751 runs about 70% of it. Some seem to think there is some sonic value in that. It surely isn't the best and they are expensive now. It depends on what you want to achieve.
If your looking for tubes to roll there are some nice new tubes out, the Sovtec 12ax7lps, Mullard or Tung Sol reissue are good places to start. See one of the sponsor tube sellers here.
